    If you take all the fat out , you take all the flavors out , everybody makes menudo the way they want , and you right people don't have to make it the way you made it, but when people start changing the traditional way it looses the originality, is just like taco bell and del taco they call that Mexican food? I don't think so

    This recipe sure is different from our family recipe, we never put beef meat just tripe, I come from a tex-mex family transferred to California lol I like to say Menudo is part of our family identity lol but it's interesting to see how other people make this.

    "Menudo a la veracruzana", or "mondongo" (mon-dawn-go), is how we call it in Veracruz.
    Man, I am Mexican and I always go to the Mexican restaurant on weekends to eat it, but now since I seen an american guy doing it, it make me feel embarrassed, and I thought: why I don't make it myself. Thanks for sharing you video it really help me.
