    Mac & Cheese Tuna Casserole

    Pre-heat oven to 350-degrees F – Makes 3 servings

    Ingredients:

    1 box Perfect Keto Mac & Cheese, made according to instructions

    2 cans or 10oz tuna or albacore tuna well drained and rinsed (you can also substitute canned salmon, chicken, diced ham, or spam)

    ¼ cup cream cheese or Mascarpone

    ¼ cup unsweetened coconut or almond milk substitute (or substitute unsweetened milk of your choice)

    ½ tsp garlic granules or powder

    ½ tsp onion granules or powder

    ½ tsp Organic Season Salt

    ¼ tsp Old Bay Seasoning

    6 oz sharp cheddar cheese

    1/3 cup pork rind crumbles for topping

    Dill Weed for topping (optional)

    Directions:

    Cook the Perfect Keto Mac & Cheese according to their instructions on the back of the box then add the drained noodles to a large mixing bowl. Add in the dried cheese/spice packet and ¼ cream and optional tbsp butter and mix

    Add in the cream cheese, coconut milk, season salt, garlic, onion, old bay seasoning and 4oz of the cheddar cheese and stir

    Use a small nonstick or well sprayed casserole dish and add the mixture

    Top with the remaining 2oz cheese then top with pork rind crumbles and sprinkle with dill

    Pop into a pre-heated 350-degree F oven and cook for 30 minutes or until the cheese is melted and bubbling

    Remove from oven and allow to rest for about 3 to 5 minutes then serve

    Macros per serving: 660 Total Calories/ 24g Total Carbs or 14g Net Carbs/ 33g Fat/ 33g Protein

    I made lupine bread following I don’t sugarcoat it recipe. I have as of yet to find a low-carb bread I don’t have to force myself to choke down to make. I’ve spent a fortune on the egg white bread lupine bread almond bread coconut bread etc. I’m a little afraid to try the mac & cheese because I’ll either love it and want to make it all the time or I won’t be able to eat it like the bread.

    I have a great hack for the perfect keto noodles. Rinse noodles with cold water for 1-2 min, then soak noodles for 1-2 min and drain. Cook without cover adding 1 extra min depending on your preference. It will still have a slight foam, but much more manageable. I’ve talked to perfect keto about this issue and told them they need to change instructions slightly. I’ve tried both ways and rinsing, soaking works great.

    I like Perfect Keto Mac n cheese but it doesn’t like me. Makes me sooo gaseous. Don’t know what’s in it but boy oh boy!! I still have leftovers from my last batch.
    I’m getting my Stuffler from Amazon tomorrow. Once I get it I’m going to try Mac n cheese stuffed waffles!!! I’ll pay for it but it will be tasty.

    I like the Perfect Keto Mac n Cheese but it doesn’t like me. Gives me terrible gas. Don’t know why. But I occasionally have it. Tomorrow I am going to try making a stuffler with leftovers (getting my stuffler tomorrow).

    I tried the Perfect Keto mac and cheese last week and was happy with it. I didn´t have heavy cream so I substituted sour cream and a little almond milk and it turned out great. I like your idea of adding to it. I will try that next time!
