This is the recipe I used but I subbed in vegan beef: https://www.thechunkychef.com/copycat-skyline-cincinnati-chili/

    – my opinion doesn't matter but Cincinnati chili really isn't bad. I'm not a huge fan of it when served over spaghetti but I can see the appeal. Over rice seems like it'd be pretty good and putting it on a hotdog is a popular thing to do as well. It's a bit different than your regular American style chilis but if you like hearty meals try it out. Ohio still blows though.

it's like someone threw everything in their pantry into the chili because that was and still is a common situation for a lot of ohioans, including my family. in ohio, especially appalachia, a lot of people are living at or below the poverty line and cincinnati chili is gourmet in comparison to what a lot of people have to eat. my dad grew up eating "hamburger gravy" – leftover liquid from cooking a hamburger combined with water and poured over stale bread – and velveeta. just velveeta, by itself. ohio has always been poor and discriminatory to indigenous people in the area and appalachians, and the comfort food there, including cincinnati chili, is a reflection of how hard it was to get "good food" there. cincinnati chili is not gourmet. it is not supposed to be. it is a symbol of comfort in times of hardship. if you don't like the way it tastes, that's fine, but you don't need to insult ohio.
