There are wild elderberry bushes all over the country, I know of hundreds locally. Search in spring for the big white flower clusters. Take photos with GPS metadata and you’re set!
Do you think this recipe could be slightly modified to make ginger ale syrup in the Instant Pot? I don't see any on YouTube. Yours is the closest.

I wonder if you put the elderberry left overs through a high speed blender like a Blendtec or a Vitamix if you would get more juice??
And you can leave out the sugar if you'd like it to be healthier.
