    My favorite things to cook in the hotpot are cubed taro, udon, any type of seafood, and BALLS. You forgot the fish balls, beef balls, shrimp balls, those teardrop looking balls with the fish roe inside waiting to burst into your mouth…

    Hotpot is the easiest thing ever in the Chinese cooking recipe.

    You don't need a whole ton of frills and you basically can throw any food items in there and eat it and when I mean ANY food items, I wasn't kidding. You can even throw fruits in there. In areas like Guangzhou, despite durian being a Southeast Asian fruit and you practically cannot find any in China, they have something called "Durian hotpot" where its base is chicken stock but the main ingredients are chicken and durian.

    There's one in my area that has a $30 all you can eat special on weekdays (not holidays) that's awesome. It's slightly Americanized by having a tomato/veg broth option. Then a bone broth and a spicy bone broth option. I drink the broth too. It's too good to waste. I'm not sure the "right" way to eat it without making a mess, but I learned to not get potato because it takes too long to cook. Instead, I stick with meats and maybe some veg. Noodles are too hard to get out of the stock.

    Hot pot looks amazing, but it looks like a lot of ingredients that I'd only use for one thing (this).

    If anything, this video is less about encouraging me to cook stuff and more about supporting good local restaurants, because making this sounds amazing – but a good restaurant probably does it better, cheaper, or both.

    Ever notice how in every video you miss a step or an ingredient because he does that retard reverb/falsetto. Josh, stop with the falsetto/reverb thing…it's old, it's irritating and makes you look like a jaggaloon.

    A month ago while hanging out at my parent's house i casually told my mom I wanted hotpot.. the following weekend and $150 shopping spree at the asian market later we were eating delicious hot spicy goodness. I felt sooo spoiled.
