I make a lot of macarons so I have lots of egg yolks! My lemon tree has amazing lemons also. I make huge batches of curd and give to friends and neighbors! Loved your explanation of the ph and timing for the different preparations!

LOVE your video!! Real cooking done articulately and without nonsense. I’m new to the InstaPot but love to can so will be pursuing that technique. I live in Denver and loved the Ft Collins story. Did you use the usual recommended water bath times? Thanks. Gotta make some lemon curd!

So much to do, so many videos to watch. You are absolutely a delight to watch. Partly because of your humor, but mostly because you have done research and I always feel safe enjoying your techniques and recipes. You and Jim are the greatest. Because of you we have 2 data loggers, one is smaller than the other, pint and quart size. With them I feel so confident and safe when I give any of my precious gifts to family and some friends. Thank you to both of you for all the time you spend to deliver us great videos. Bless you both.

Recently, I washed a batch of whole jalapenos and 6 lb of celery and used a little bit of dawn with some vinegar and water. We made poppers with the jalapenos and I swear they tasted so different. Really wonderful (the jalapenos). And the celery came cleaner than ever before. Just be sure to rinse well. It will be my go to wash from now on. Stay healthy, be safe and many blessings.

OK I know this is like my third comment. But I comment as the video is going so I don’t forget. We ordered a freeze dryer and will be getting it next month or month after next. I would love to see you do this in the freeze dryer as you talked about in your video because I think that’s the way I want to go instead of canning it. Thank you
