Watch you steadily now 🙂 I do my vegetable broth a little different than you do though ( although I love the way you do it!!) I keep what some people call " soup scrap bags" in my freezer. They consist of scraps of what is left when I prep veggies for meals. Everything goes into the bags. When I get enough bags in the freezer to get on my nerves ( usually about 4 gallon bags) I throw all of their contents into the roaster, add some water, spices and let it go all day on about 250 to 275. Last year was the first year I did it, after watching some other channel. What a great flavor!! and zero waste.
