    I made the Hungry Elephant recipe but it came out a little dry however the flavor was amazing. I topped it with icing. I'm going to try it again and reduce the cooking time by 5 minutes and see if that's any better. I guess I could also cook it next time with an additional pan of water. Anyone else experience this or have any suggestions?

    Just thinking 🤔… What if you replaced the pumpkin spice mix (in the first recipe) with the ginger spice blend (in the same amount of recipe #1) from recipe #2? I sometimes switch up flavorings that way…

    Pumpkin pie spice does contain ginger, but I was surprised that the first cake didn’t have any additional ginger. I was already editing that recipe in my head! Thanks for your videos. Love them!

    I made the winning cake today, using a long loaf pan instead of a bundt. I did add about a tsp of molasses. I just now had one slice, and it was amazing! Very spicy in the best way, and I easily could have eaten half of the cake. This recipe is a keeper!
