    Ok – a fan here – never saw onions taking that long – even in a slow cooker if that's all u've got – bit adding filet mignon to ANYTHING (Brussel sprouts or cabbage or potatoes) – talk about gilding the lily!

    Let me say that I love you & I love French onion soup. I will forgive you for using Fillet Mignon for soup. Stew beef, London broil, chuck, a good size stew bone, okay. This is French peasant food. I learned the recipe from my great grandmother. Now we grandmas can teach our grandchildren. 😋

    Normally it's made with a strong beef stock and there shouldn't be any visible meat in it at all. The French certainly wouldn't put fillet steak in it, or herbs. A little sugar will help the caramelisation – it really shouldn't take hours. And yes, Gruyere is the normal cheese.

    looks so good I will make this for lunch I have some fresh back strap in the freezer and always have a ton of onions ( eat them everyday) and garlic… both so good for you… great idea to add steak to it. have to use beef stock in the carton. good soup anytime but nice on a cold night. yum thank you xoxoxo

    Paula, take the lid off the pot because the condensation inside the pot with the lid on it will prevent the onions from browning! That's what I do. Also, if you want them to brown don't add salt until they are finished! Just some tips! Butter, yes and butter!

    This soup looks so good !!! Adding the filet mignon to it takes it to a new level. I've been a Paula fan for years and still rely on all your recipes. Everything is always the very best and always a hit in my house. Shout out to Eddie for all the fantastic camera work !!!!!!

    Love you Paula! Went to Lady and Sons today! The roast beef was not good. Sorry. The chicken and dumplings were spot on. We felt pressured to buy the family style dinner, even though I explained I had the gastric bypass. We didn’t like anything but the sweet potato and the chicken and dumplings. You may want to evaluate. Sorry. Trying to help. I had relatives who said the food wasn’t good but we tried anyway. So sorry.

    Oh my goodness gracious Paula, such deliciousness in one bowl. So, I think one should start on the early side with this soup, so the onions can caramelise properly. I'm going to give this soup a go. Thanks Paula!

    Love French onion soup. I use 3 white onions for 4 servings, and it takes about an hour to caramelize on medium heat. Gotta be careful though, once they start to caramelize they can burn quick!
