The ham you have in the jar – we got a bunch of those slices when we bought a hog last year. I LOVE how that ham tastes from the jar! It's great for EVERYTHING!!! It's probably my very favorite product to have in a jar, or it's at least in the top 3. 🙂 I just cut the ham, put it in the jar, and process. SO easy and good. I am looking forward to canning some baked beans and some cranberry sauce as soon as the summer garden canning is done.

I write on the top of the lid if a roux or other thickener needs to be added or like in my jars of Mississippi pot roast I add butter. It's just less thinking and remembering on the day I'm using the jar.

The extension office in county that I live in Tennessee have been have water bath canning and pressure canning classes this summer. I think this is great. I haven't been to any of them. I have been canning for about 50 years.
