    You wish you could do anything better than my grandmother. I pity all professional chefs that think that they can "improve" whatever traditional cuisine. You just sound like an arrogant, narcissistic hipster.
    Sure you can use modern techniques to facilitate some processes, but "improve" ?! Stick to your foams, gels, spherifications, sous vide, blablabla…. any one can read and reproduce a recipe. Come to Europe or Asia or South America or Africa and try to "improve" most grandmothers recipes and see if anyone will prefer yours, you will be ashamed.

    I made this recipe twice. Once with searing the meat, and the other time without sharing the meat. I feel all the time when it was without searing, it had more flavor from the onion and the seasonings.
