    This is the best gluten free quick bread I have found and tried. Made it last night with dried figs, thyme and vegan cheese. I don't regularly eat dairy, so I used tofu in place of yogurt. My bread didn't grow as tall (maybe the baking powder has lower strength?), nevertheless it had a wonderful texture and flavor. I can think of many combinations: walnuts/ figs, rosemary olives, etc. This is now my go-to recipe for the daily bread ๐Ÿ˜‹

    This looks great. Going to try it with some plant based yogurt and no eggs as I have a family history of Cancer and need to avoid the estrogen in dairy and the choline in eggs. Thanks for posting

    Fyi for grain free diets, you can use a mix of 1/2 tsp baking soda to 1/4 tsp cream of tartar to sub for each tsp of baking powder si ce baking powder uses cornstarch.

    Definitely.. I found out a month ago that I was gluten intolerant & I had to give up bread and all flour/wheat/starch based products & foods. Please please could you give us more recipies that don't have those ingredients in them but are not weight reducing either.. I e lists much weight since giving up all that, It's now become scary.. ๐Ÿ˜”
