    Love potato pancakes! They are good for supper too with sour cream and chives! You have such great ideas! Sometimes I use leftover pancakes to make salmon patties, but for some reason salmon is way too expensive right now. ☺

    Okay… Tried these today. Leftover mashed potatoes. Found some cooked broccoli, shredded some cheddar… egg, flour. Delicious! Topped it with a little leftover gravy. Thanks for the ideas and for helping me be more adventurous with my cooking 😉

    Wow! Just made these with a good cup n a half of mashies, probably a 3rd lb of American cheese starting to mold…..broke that off, 4 eggs, pepper and a Tone's onion salt mix from Sam's……..OMG sooooooo good!!! I would've normally tossed the cheese and potatoes at this point but just saw this yesterday and made today. I feel so good not letting things go to waste all because of you!! Thank you so much for your wonderful, imaginative ideas!!

    Omg, I made potatoe cakes two days ago for supper cause I had left over mashed potatoes. I added green chives, bacon bits, cheddar cheese to mine. Along with chorizo black bean & rice soup. Delicious.

    They almost look like the potato cake version of a hoe cake (fried cornbread). Right now my kids are eating leftovers for their lunches, since I really didn't plan or budget meals for them for lunch right now. But its in the budget for next month.

    Oh my gosh, you have eggs! LOL. I have six to my name and I am saving them for emergencies. Maybe you can do a video on how to cook with egg substitutes. I just learned that you can use garbanzo bean juice as an egg replacement and I made a huge batch of chocolate chip cookies and you cannot tell the difference!
