question bout carrots I notice if I don't peel my carrots when I cook them long time the skin comes off. Is this just me or?? I notice you didnt peel your carrots.

Looks yummy. Got an idea: instead of adding the noodles, add some biscuit dough/dumplings to the top and let it simmer, just like chicken and dumplings.
