    Brilliance and then nothing! I Love that!Same here! I love that you started off with that comment. I have my own business and those words wring so true. Sometimes I work without stop because I'm on a creative roll and then nothing for who knows how long. Maybe a week maybe a month then out of the blue you can't stop me!

    Cook your potatoes in the instant pot first and refrigerate them, and then do the home fries. I don't know what it is, but the skin get crisper! Yummy! Garlic, garlic, garlic on my fries.

    1st!!! My kiddo LOVED the reverse play. "Can she really do that?!?" Hahah. 2nd, we use pablano peppers finely diced in our home fries, onions, cumin, onion and garlic powder, smoked paprika and salt. Hello yummm!! Use the same spice combo AND add nutritional yeast – best popcorn topping EVER!!!!

    I have been seasoning my potatoes with a seasoning blend that Amy's (fruityfoodie) husband makes called bayou blast Annnd a spice blend by Fiesta Brand that they sell at HEB called Uncle Chris Gourmet Steak Seasoning. I love that combo. then I cover everything with ketchup and mustard and I eat them with dill pickles. so good! 😋

    I tried a bit of apple cider vinegar instead of the water and it adds a bit of sugar that makes the potatoes brown and crisp a bit more on the outside. I like garlic, a touch of cayenne pepper, and a bit of rosemary or cardamom. Lemon juice also works instead of water with the same results. I don't use salt either.

    I put my rinsed, diced raw potatoes in a gallon size bag (the potatoes are still a little wet) and add onion powder, garlic powder, paprika, parsley, salt and sometimes nutritional yeast if I want a cheesy potato and I seal the bag. I shake the bag until the potatoes are coated with the seasonings. It works really well. They are delicious!

    I've used water for a longggg time (great minds think alike), and it works great! It only takes about 20-25 minutes to bake them from raw potatoes. I'll use onion powder, garlic powder, Cayenne pepper, paprika, and sometimes some no salt seasoning.
