    Use two flips to extract the slices; one at each end. It gives more stability and keeps the structure of the piece.

    Looks amazing! Try adding some balsamic vinegar to the sauce. You don't need much, but like the nutmeg in the bechamel, the vinegar elevates the red sauce.
