    I'm so excited to see this recipe! (Fairly new to your channel.) My town has a quite large Chinese population and I've had this version of the dish. Soooo good! However, they didn't actually break up those peppers. I'm definitely masking up soon and heading over to Ranch 99 to grab those ingredients. Thanks!

    Thank you for spelling Sichuan the correct way, as you did. I lived in Chengdu, Sichuan for 1 year. Every day was spicy food. Even their KFC fast food added hot spice. But yes, those peppercorns are important.

    Papa G, I've read where Szechuan peppercorns are unique in flavor, and when called for, there is no substitute. So I need to send for a bag of that, plus the sweet potato starch. Your kung pao chicken looks luscious and I'd like to try making it.
