Whenever I bake custards such as pumpkin pie or quiche, I use this bit of wisdom from Google and it has NEVER let me down: "When you give the pie a gentle nudge, there should still be a bit of movement in the middle: look for a jiggle, but not sloshing liquid. A knife inserted about an inch from the center should come out clean. You could also use an instant-read thermometer to check if the filling has reached 170ยฐF." I use a instant read thermometer and take out at 170-175 degrees. It may NOT look fully cooked in the center, but it should only look a little bit of "underdone" in the center. It will continue to cook a little on the counter before it starts cooling. The filling is super creamy and not overdone. Almond flour crusts are tough, especially if sweetened with allulose. Keto baking is NOT easy y'all!!!

Looks delicious! Havenโt watched yet but I put foil around the edges of my pie to keep it from burning. Donโt put on too far, or will stick in filling ! Canโt wait to try your recipe for Thanksgiving!

I'm sorry this isn't a question about the pie, but I made the chocolate chip cookies from the video you used to have up, and mine are flat not fluffy. Not sure what I did wrong except for I used different sugar sub.
I have really come to look forward to your videos. I am still relatively new to keto and I'm so thankful that your recipes are so easy. I look forward to everyone one of them. I noticed the pie crust was a little burnt, could you cook it for a shorter time or lower temperature?
