Trying to fill the void in my food life… realizing I had dropped a lot of food I used to have weekly eating out. I made this recipe with a few changes leaving off the xanthan gum, sweetener and nuts. I also substituted thighs for breast, using what I can easily find. Adding turmeric, cabbage, mushrooms, water and more chicken stock to make a soup. Loved it!

This is a great recipe! I have made something very similar but with peppers, carrots and red onions. Never tried it with nuts. I 'll will make this this week with walnuts can't wait. Thanks for inspiring me.

This is so awesome! Thanks! Even my 9 year old son likes it. I don’t add broth to the sauce , dish comes more dry like an appetizer. Used coconut aminos and cashews in place of soy sauce and peanut.

As far as I know, the veggies should be ginger, garlic, and scallions only. Sichuan peppercorns (remove seeds) and some sort of dried hot peppers (I use arbols which are relatively mild). Marinate chicken in Chinese cooking wine (or sherry) plus soy sauce. I finish with a mix of peanuts-only peanut butter plus rice vinegar (make a paste, add at end).

I think that purists use only chicken leg meat (I use thigh). Purists probably think my version barely better than the American versions. Sichuan peppercorns are essential though.

I just made this tonight and it was awesome! A few greats changes I included adding a tablespoon of organic no sugar added peanut butter to increase the peanut flavour! I also added freshly cut red chilies along with the green onions that you suggested! Lastly I put in some shitake mushrooms! This defintely satisfied my chinese food tooth ahaha my dad loved it too!!

I loveeee this recipe. I made this three times now and followed exactly how the recipe is written (except for the choice of veggies). I tried it with asparagus, mushrooms, bell peppers, and each time it turns out delicious. Thank you so much!
