A suggestion for another time – Tuna is really good on bell pepper planks, too (instead of lettuce). And bell peppers are a bit stiffer than lettuce, so more similar to crackers for ease of eating. So, for a change of pace, give it a try.
Aldi usually has a great price on peppers, too. I love the tuna mixed with Cesar Dressing on the peppers. Personally, I use the Romano Vinagrette by Whole Foods. To add even more veggies, I mix the tuna up with some shredded broccoli and green onions. I hadn't thought of it until posting this, but would also make a good Stuffed Pepper with some Parmesan.

The curtains look great! We picked up the corned beef at Aldi the other day too; it's a perfect instant pot meal. Paper and pen is the way to go and yes, it's my preferred method for remembering things.
Looks good… hubs is gone AGAIN… meal prepping my week as we speak too( well ok…planning… and defrosting…) prepping will be after lunch I guess…

I love those curtains. They look perfect. You’ll have to let me know how the quesadillas with egglife wraps turn out. I’m waiting on my Walmart delivery order to arrive in 10 minutes and I’m getting stuff to make manicotti for dinner. Using egglife wraps as my pasta. I’ve never used them as manicotti so I hope it turns out good. I’ve seen those beef sticks at my Aldi but haven’t tried them. I always get their thin sliced steak that’s with the beef jerky. It is so delicious.
