    I love all the ingredients. I would eat this egg salad for breakfast, lunch or supper. Can I substitute apple cider vinegar for the red wine vinegar in this recipe?

    I hate eggs, pork, shellfish, fish, game, In fact all I eat is beef, chicken, and salad/veggies, most cheeses, so my menu is small and after a month I got burned out and have been stuck for 10 days at the same weight,. But I must overcome. I don't write my Macro's down maybe I should start. Plus I have a bad foot so I can't go walking. But I lost 20lbs in the first month so I can do it. Your recipes have helped like the Cabbage taco skillet was a nice change, I need to try some other recipes. Quit making excuses.

    Now that’s a thing of beauty! I was thinking of what to have for lunch and was stuck. Salad sounded good, but I usually have a regular Cobb or a Chef and my grocery order with my cold cut turkey and ham is scheduled for tomorrow. BLT romaine boats was a possibility but I’m sort of burned out on them at the end of summer. Ditto for egg salad romaine boats – just not exciting. THIS is the best of all of those! And, bonus, I have a ripe avocado that can’t wait till tomorrow. The only thing I’m missing is the blue cheese (Friday’s grocery delivery was missing the blue cheese!) but I think maybe I’ll either use blue cheese dressing for this time or make your dressing and stir in some blue cheese dressing. I wish I had the blue cheese or even some feta so I could have just your dressing as it sounds perfect for this salad. Either way, this is definitely lunch today. Thanks for this winner!
