Great video! Others have already commented about freezing fresh ginger and grating as needed, which is great. Or if you'd rather not have to grate it every time (I hate cleaning grater), you can whiz up the fresh ginger in the mini food processor and freeze the mush, either in a cube tray into cubes or in a flat thin layer in a bag (break off a portion when needed), and add straight to your pot.

I just buy fresh ginger at the mkt & wash it & freeze it. When I need it, I just grate it over the dish…peel & all cause once it's grated like that with the little hand held grater you can't even tell unless you're using in something clear. I still will even grate it in keto lemonade the same way though.😂🤷

Buy fresh ginger and freeze. Tastes so much better grated fresh in recipes. I love it when you critique your recipes/meals – what did and didn’t work well. Thank you.
