You've mentioned dietary issues a few times and when I heard you mention the nightshade issue, I thought, that sounds like me. I had terrible gut and joint pain issues, thought nightshade might be an issue, and avoided them with only minor relief. But then I went on a zero – low FODMAP diet for several months and what a huge improvement. Turns out I can tolerate tomatoes fine (which is great because I canned a ton this fall from my garden). After months of allowing my gut to heal, I have slowly, one at a time, tried various higher FODMAP foods and found not all are an issue. If you've never done the low FODMAP thing, it is not an intuitive diet, so lots of looking up, but Monash University has a great website listing which foods are high and low and in what amounts. Finding this information really changed my life, that's why I mention it. Thank you for this recipe and I can't wait to try it!!!

Cant wait to try this recipe. Looks delish! May I ask what breed of dog Teddy is? He is so adorable. I lost my 15 yr old shiztu last year and swore I'd never have another one, it's just so hard losing them. But every time I see your beautiful Teddy he melts my heart more and more. I'm starting to change my mind . I know it' s hard to lose them but the unconditional love they give is a gift from above.

I wonder if making the noodles with some cornbread flavoring drops in would make it taste like corn tortillas so I might give that a try. For some reason I can't tolerate green or red peppers but still can eat jalapenos and serrano chilis, not sure what the difference in them is but it makes me happy. I started reacting to tomatoes last year which was sad because that is mainly what I grow in my garden. The neighbors are all happy to get them though. Thanks for another lovely recipe!

You've got your groove on girl! I love the dancing to the oven sound. I've never heard that except on your stove. It's pleasant. 🙂 Well I love enchiladas. White sauce is good for me. I love queso cheese on them. Crumbled or melted. Well truth be told I like both! This was a nice recipe.

Oh my! I am hungry now! :o) Looks amazing! I need to get making those noodles. But first I need to tackle making the PSMF bread. :o) I've waited so long to "try" my hand at making these things. Thank You for making all of your recipes so easy! My teenagers would even eat these enchiladas- win for me!

Love this idea! I have been using your carnivore noodle recipe for a lot of different "pastas", like lasagna noodles, quesadillas, and of course as spaghetti noodles, in chicken soup, tuna hotdish, etc. This will be next. I was glad to see a video that does not feature the PSMF bread. I have tried, tried, tried and tried all the different variations and techniques out there and I just cannot get beyond thinking I am eating styrofoam with any of the varieties. I've wasted enough ingredients with those experiments and figure it's just not for me….I am long done with making myself choke down things I don't enjoy. So let me be the first to say (or maybe not the first), "MORE MEAT recipes, please!" (And ones like this, that are all or mostly carnivore, but not with the styrofoam bread….I have been skipping through those portions of any videos that have it. LOL)
