think of the dish you are making … red radish for baby potatoes in a stew. in dishes, you want chunks (larger radishes or turnips); mash from the larger
I tried just boiling a daikon, and they were nasty, quickly into the waste basket.

When a watch a video about which vegetables would taste closest to potatoes and then they say it tastes good and it completely lost me. I don’t understand what does “tastes good” mean when we are looking for is whether it tastes like potatoes… 😢
I’m inspired to try this with a parsnip and a rutabaga. The best fat to use is lard if you want crispness.

Many of the recipes that come from the old world, originally used turnips instead of potatoes. By swapping out the potatoes for turnips, you are in fact, re-establishing the old recipes.

I made cheese casserole using daikon radish. It’s came out pretty good.
For me, the red radish is so potato like it is the best. Years ago I wanted corned beef hash. A Low Carber said to dice up a bunch of red radishes into small pieces and fry them with a can of corned beef. Honestly you could not tell they weren’t potatoes.
Last week I cut them just as you did and made the 109 year old heirloom recipe for Hamburger casserole from the Hillbilly Kitchen, and it turned out just as good as the real potato version.
I am thinking of grating then and making hashbrowns with some onion and green peppers.
Turnips are also a good potato substitute. I have made your scalloped potato recipe with mushrooms several times and my picky grandson never knew they were turnips.
I had a little fun by asking him if he wanted me to make a dish with turnips. He said, ‘no! I hate Turnips,’ as he took another bite of the scalloped potatoes, and ended up asking for more.
The Daikon was a disappointment for me. I tried it several times. It never tasted like a potato and had a texture that just wasn’t potato like at all.
Have never tried the Asian radish. I probably won’t as I am fully satisfied with the red ones.
The thing that disappoints me about cooking radishes isn’t the taste, it’s the texture. I absolutely adore that fluffy, slightly grainy texture of a russet-style potato and absolutely nothing can replace that. For me, potatoes are the absolute hardest thing to live without on keto. Even when I was on keto for months straight I still felt like crying every time I thought of potatoes.
Our favorite Korean BBQ restaurant has beef and daikon soup (I’m sure it’s Korean radish, not daikon, but that’s what it’s called on their menu) and my husband wouldn’t believe me that it wasn’t potato for the longest time. I could tell. It’s still delicious, but it’s not potato. Not even close. I make this soup at home (just made some a couple of days ago) but since I was craving potatoes it was heartbreaking even though technically it was a delicious soup.
I made a Korean radish au gratin and the entire family hated it. Potatoes it most certainly was not.

The bitterness is from the end part of the radish ! The daikon radish the top n center is sweet towards the end is bitter!
The red radish cooked with a pot roast reminded me more of a carrot in texture. It really did look like a red potato. I think that's part of what fools people into excepting them as a potato. I tried frying for a hash with onions and while it was tasty, still did not pass for a potato as far as I was concerned. I guess it boils down to your expectations.

I have made hash browns with Daikon radish and they are delicious, but I will definitely try roasting them and at least red radishes.
None of them taste like potatoes at all. Just gotta love radishes
