I was busy on Saturday and ordered from Aldi via Instacart. I had a nice talk with my shopper because Friday when I looked, they had no chuck roasts or corned beef. Saturday I struck gold! She said Aldi restocks constantly until about 5-6 pm daily so keep looking. I made the sauce from the Ruben casserole recipe and served it with sauerkraut with the corned beef. OMG it was so good. I'm looking forward to your tofu recipe. Meal plans are the way to go. I have to be more disciplined.

I cant get tyson's blackened strips anywhere near me. :(. I love them. Can I make then? Sure but they are convenient. Aldi's has the best deals. I love them. Stock up on corned beef around Saint Pats because they freeze really well and are so affordable. I am doing Nush pancakes tonight for dinner Yay.

Nails look nice. I love purple! I was at Sam's last night and was eyeing up the chuck roast, but I had 3 huge rib eyes in my cart, so I'll get the roast next time.
Hope, don’t throw out your fresh herbs. Wrap them in individual portions and wrap them in a paper towel then place them all in a Ziploc bag and place in the freezer. You can then pull out what you need for a recipe. I place mine in groups for homemade bone broth, so all I have to do is pull out one paper towel group and throw it in a pot. Frozen they last a long time, better than the dried in a cabinet which in a humid environment go bad fast.
