Who doesn’t like fast and easy recipes? Well it’s really not fast if you count the time waiting but tip, make it the night before it only takes about 10 minutes to put together then the next day it’s cooking time and you’ll have some delicious tacos in 20 minutes 😅 keep in mind the chicken is not fully cook at the 15 minute mark so don’t be scared it dries the chicken of course if you use thigh you will not have to worry. I’d this your traditional al pastor? Noooo but promise you that’s not going to be a problem after the first bite! 🎉

You got to be careful with marinating meat with pineapple juice. You can go too long, and when you do it destroys the texture of the meat. I'm guessing the enzymes in the pineapple juice were too diluted by all the other stuff to have that effect and that is why you got away with marinating it overnight. You al-pastor does look good.

Amazing recipe! Thank you for this! I could NOT find dried New Mexico chiles or the ancho at the two stores I hit right after work 😡 so unfortunately I had to settle for using a Chile negro and 4 California chiles instead. But let me tell you, the marinade still tasted freaking amazing! I’m super excited to try it tomorrow when I make the tacos! 🔥
