Sorry, but it doesn't look good at all or very flavorful…my meatloaf is nothing like this and has a plethora of cajun spices in it…the original recipe came from a world-renowned Cajun chef, who, regrettably is no longer with us and I have, over the past 30-35 years or so, made adjustments here and there and added a few things. Also, I use half beef and half pork, which keeps the meatloaf from being dry.

Howdy, Ms Catherine! I made this last night for supper. I even made the sides of green beans and mac n cheese. The only thing I added was fried taters to the menu. Let me tell you, we LOVED the meatloaf! It was delicious, and today after church, we had meatloaf sandwiches. So good!!!! God bless y'all.

I would like to see that in a double loaf instead of one big one ! Reason is there would be more surfaces for the Yummy glaze and more of the tomato would be the acid to perk up flavor, and crisp it up more ! Thanks for the yummy meat loaf Catherine, youβre a real sweetheart!

That looks delicious, as usual. Catherine can you tell us where you bought the 5oz cans of Evaporated Milk? I shop at Kroger. Target and Walmart and do not remember ever seeing it in small cans like that..Thanks so much for posting this one.. Will certainly try it. Also i use dehydrated onions and various vegetables in my meatloaf which i keep in stock in my kitchen Also marvelous for Aspics. I buy them in large plastic containers on Amazon.. Very handy if you want to make something but do not have all the ingredients on hand.

If you want a really moist meatloaf try this! Pour about 3/4 cup water around the meatloaf and cover with foil. Uncover for the last 10 minutes. Delicious!
