Is it possible to overcook the jackfruit to a horrid mush? I'm not sure when to add jackfruit into the cooking processes. At the start, or at the end, (with a tad bit of cooking). I.e.: Pressure cooker – in with all the rest of the ingredients and cook all at once. Stovetop/slowcooker – just at the end. And how long do you need to be cooking the jackfruit in order for it to pick up the maximum amount of taste? I can't tell you how thrilled I am that you covered jackfruit. I've been eating the sweet stuff since my late teens. I have trepidation in cracking open the can of jackfruit sitting in my pantry. SO glad you explained about the hard parts, (I was wondering about that!), and the seeds. My first thought would have been, (upon stumbling on a seed in the canned green jackfruit), "Eeekkk! What BIG BUG laid it's egg in the jackfruit!" That can would have ended up down the garbage disposal.

Kathy, I use kindle, and I just can't manage to get the revised version. Every time I click it on Amazon, it just takes me to my old cookbook on the kindle cloud. And it doesn't have any jackfruit when I do a search, plus it shows the old cover. I purchased it in July 2018, the revised one was published in December. Is it not available for Kindle yet? Or is this a linking error on Amazon's part. Thank-you. 🙂
