I made this today but used pearled couscous instead of pasta and then also added some zucchini and spinach since they were going to go bad. SO GOOD!!

Home made soups are a staple in my Fall/Winter cooking. I always keep my freezer loaded up with soups. One thing I do when cooked pasta is required for a soup recipe, is I cook it separately, rinse and drain very well, and just put it into zip loc bags for single portions (since it's just me) to freeze flat. Cooked pasta freezes beautifully and this way it doesn't get soggy because I'm adding it to soup fresh every time. Will definitely try your recipe Sara – it sounds yummy! Gotta keep those babies happy; keep eating & stay well.
