I love going back to the beginning of canning. Learned when I was young at grandparents farm. They had a dairy farm and I was the butter churner. Learned a lot over the years but always happy to get new tips, tricks and recipes.
I got the USDA book about a month before my canner, because I knew as soon as I got the canner, I’d want to use it. Knowing (something) before I started was really helpful.
U. Are I h an encourager to newbies. Sometimes people forget that others are just starting on their canning, gardening, quilting journey. Going back to the basics sometimes is what is needed.
Thanks for reaffirming that you can use ham as an ingredient. I downloaded the book several months ago and made bean soup and added a couple tablespoons of finely chopped ham to each jar, then watched another channel that was a stickler for following recipes to the letter, then I started second guessing what I had canned. I have been canning off and on for about 50 years- started helping my mom as a young teen but only did water-bath canning until DH asked me to do venison 20ish years ago. But with kids in school/ college I didn’t do much pressure canning until recently. Now I am trying to can all the meats and soups that I can.
This is great. I had watched lots of YouTube videos on how to can. I just did 4 cases of pint size chicken and beef this pass weekend. Looking forward to watching many more of your videos. Thank you!!!

Hello Jeni new subscriber and want to make sure I heard you correctly. It is safe to can cured ham either by itself or in split pea soup? You've explained everything very nicely thank you. Missouri Wrightchk
New sub ~ Yay for the collab and new canning ideas! I'm in my 4th year of canning. I purchased two canners that sat unopened in the garage a few years before I had the nerve to try. Now I especially enjoy canning meats & bone stocks (chicken, ham, corned beef, pork butt, beef chunks, ground beef, turkey) and lots of beans. ~ K

Good information. Thank you for explaining the difference between safe and tested vs safe recipe. I guess I keep forgetting I don’t have to follow a ball recipe just follow the usda guidelines for my own recipes
