This Keto cheesecake recipe made in the Instapot turned out absolutely delicious.

    Instapot KETO Cheesecake
    8 Quart Instapot
    1 cup water for instapot

    9×3 spring form pan
    parchment paper

    Crust:
    2 cups ground fine pecans
    5 Tablespoons butter-melted
    Filling:
    16 ounces cream cheese
    1 cup sour cream
    2/3 cup swerve granulated
    2 eggs beaten at room temperature
    2 pinches salt
    1 Tablespoon vanilla extract
    Topping
    1/2 cup sour cream
    1 teaspoon swerve granulated
    1/4 cup fresh blueberries
    1/2 cup whipping cream
    1 teaspoon swerve granulated
    5 strawberries
    about 10 whole blueberries for garnish
    3 whole strawberries for garnish
    If I had to rate this recipe it would be a 10 out of 10 for KETO…Joe and I both LOVED this Keto Cheesecake. My problem with staying on Keto is that I LOVE sweets, this cured that for me. I will no longer have to "cheat" as long as I have something like this.
    There is also a way to make this in the oven if you don't have an Instapot, I will try to find that and make a video on that also for those of you who don't have Instapots.

    I want to save this video and try to make this in my Quick Cooker which is the same as an Instant Pot. I wan to do the strawberry topping for the who cheesecake because I do not like blueberries and strawberries are my favorite fruit. Besides Joe liked the whip cream better lol.

    I too am a sweetaholic. When I was on Atkins many years ago I made a " cheesecake" recipe that used cool whip, sour cream and lemon jello powder. Wasn't bad when that was all I could have. This version looks so much better!!

    It looks so yummy Melissa, A trick I learned with my instant pot is to make a foil sling like a piece of foil folded over 3 times and then make it in an X pattern underneath the cheesecake Pan. And then once is done you can pull it right out of the instant pot..
    I absolutely love chunk I miss my rottweilers I've had 7 My last boy was a 137 pounds and we named him chubs..

    I received a 5 pound box of pecans from a family member that were the best pecans I've ever had (except for the ones back in Texas where I grew up – papershell) These came from a place called Cane River pecan company.. delicious.
