A simple and tasty turkey meatloaf made in the Instant Pot

Instant Pot Turkey Meatloaf

Meat Mixture
2 pounds lean ground turkey
1 1/2 teaspoons fresh thyme
5 or 6 large mushrooms, chopped
3/4 cup Panko bread crumbs
1/2 cup whole milk
1/3 cup grated parmesan
1 egg, lightly beaten
1 teaspoon each Kosher Salt and coarse ground pepper
2-3 Tablespoons dehydrated onion
1 Tablespoon garlic Powder
1/4-1/3 cup bbq sauce, slightly watered down

(You can add other spices and flavorings, like Worcestershire sauce, Old Bay seasoning, Sriracha cumin, herbs, or whatever you want! My hubby doesn’t like spicy, so this is a safe blend!)

Topping
1/4 cup ketchup
1/4 cup bbq sauce

To the meat, add all of the meat mixture ingredients and mix thoroughly, so everything is combined, but do not over mix. Over mixing will make the meatloaf tough.

Put trivet in Instant Pot, and add 1 1/2 cups of water.

Press the Saute button to get the water warming up.

Form the mixture into a loaf, and put in on a square of foil, with the sling under it.

Make sure your loaf is of even thickness for even cooking.

Spread the ketchup over the top of the loaf, then the bbq sauce over that. Or just mix them together and coat the loaf.

Gather up the 2 ends of your sling and carefully lift the loaf and set it on the trivet in the pot. Tuck the ends of the sling to the side so they don’t get sauce on them.

Put the lid on the IP, and set the knob to Sealing.

Cancel Saute mode. Press Manual, make sure High Pressure is highlighted (if you have the Duo model) and use the + or – button to select 30 minutes cooking time.

After it is finished cooking, let it naturally release the pressure for 10 minutes.

Then turn knob to venting to let out any remaining steam until the pin drops. It may drop during the NPR, so don’t be concerned if this happens.

Open the lid, and use a meat thermometer to check the internal temperature of the meatloaf. It should be 160 degrees or slightly higher. If it is not done, close the lid and set to Manual and adjust the cook time to 5 minutes and do another NPR of 10 minutes. After opening, check temp. again.

Gather up the 2 ends of the sling and lift the meatloaf out of the pot, very carefully, and set it onto a waiting dish. Use an oven safe dish if you plan to set under the broiler to caramelize the topping (If you are going to do this, add some more topping, and a little sugar in the ketchup will help it caramelize! Broil at 400 degrees for a few minutes. Watch it closely so it doesn’t burn.).

Great with mashed potatoes!
