Years ago ICO (instant coram ollam or before instant pot) I used to make ricotta before the loss of my spouse. Now being a widower I have little need of ricotta. However, I've wanted to make real lasagna for someone who has gotten frozen store bought stuff called lasagne. I have canned homemade ragu bolognajise, homemade ricotta, homemade grana in the freezer, Fresh thin lasagne pasta. I'll make besciamella and make real lasgna.This may be futile since for whom this is being prepared has a definite lumpkin proletarian palate.
The point of this is that for the first time I am going to make ricotta in the Instant Pot and strain it in my Greek yogurt strainer..
I'm wondering if nut milks would work?
Wouldn't it be better to salt the milk first so the flavor permeates all of the milk instead of just sticking to some of the curds?
