    Thanks so much for visiting my heart-filled kitchen today! This copycat Zuppa Toscana Soup couldn't be easier than in the Instant pot, but if you don't have an Instant Pot you can follow the same steps on the stovetop. Just cook everything until the sausage is brown and the potatoes are tender.
    RECIPE:
    1 lb of Italian Sausage
    4 Medium Potatoes
    3 Cups of Fresh Kale
    2 tsp of Minced Garlic
    1 tsp each of Oregano, Salt, & Black Pepper
    32 oz of Chicken Broth
    1 Cup of Heavy Cream
    Watch Video for steps or:
    Add 2 Tbls of olive oil to the instant pot on the saute setting. To that add the sausage and brown until fully cooked.
    Meanwhile, Wash, peel, and cube the potatoes.
    Add all the garlic and seasonings along with the broth and potatoes when the sausage is cooked.
    Add the lid, set to sealing, and pressure cook on high for 5 minutes.
    While it cooks, wash, stem, and cut the kale into 2" pieces.
    When cook time is up on the instant pot, do a quick release and remove the lid.
    Stir in the kale and heavy cream.
    Serve topped with shredded parmesan cheese (optional)
