    This is the first thing I made in my new instant pot. Delicious. However… I bought the Duo Mini (3 qt) as I cook for one (me). I eyeballed the veggies before chopping them up and realized that they would never fit in the mini's pot. I cut everything in half and set one half aside for another time, then chopped the other half of each veggie. I did use the full can of tomatoes and full can of tomato paste and did use 1 cup of broth. I do not think the result was too "soupy" but YMMV. I don't know the percentage of IP users who depend on the mini but it is something to keep in mind as you produce future recipes.

    I alwsys brown diced bacon slices before putting in the onions.
    I only use 3-4 different summer tuoe squash, no eggplant or peppers its jyst the way I learned to make it 40 years ago

    This was soooo good! I love how easy it was and I just bought the "Better than Bouillon" as you suggested in many of your videos and I LOVE IT! I wish I would've gotten this so much sooner!     Tried this recipe tonight and it did not work. My Instant Pot never pressurized. I checked the seal, valve, and pin and everything was okay. I went on the IP support page and it lists this in the troubleshooting area "Meal had at least 1.5 to 2 cups of water (2 to 3 for 8 quart) or liquid with a watery type of consistency". Since there is only 1/2 cup of broth in this recipe, perhaps this is why my pot never got up to pressure. Any other thoughts? I love Pressure Luck recipes and was so looking forward to this one.

    Jeff, I made this last night with one variation. I cut up into small pieces a half-pound of (have your Rabbi cover his ears. . . .,) bacon, and sauteed that in with the onions. . . . It was AWESOME!!!!!!!

    It's odd… there are several ingredients in this recipe that I dislike when they're flying solo (eggplant, squash, zucchini), and yet, weirdly, I love ratatouille. Can't wait to try this out. Keep the recipes coming, Jeff!

    Wow that IS a potpourri of beautiful vegetables. I love how the sounds of the onions simmering soothes my insides on this cold and dreary day. This dish reminds me of my great aunt Cecil and I haven't really thought about her in a while, so thank you.
