If you want them crunchy, but not oily, couldn't you put them in an air fryer for a few minutes after the instant pot?

Unsolicited pro tip: when using aluminum foil, the matte side should be away from your food with only the shiny side touching it. (8:20 min in: no need for oil, just flip the foil.)
Get rid of music!
You don't have to deep fry latkes. You can cook them in a regular saute pan, and use the same amount of fat as you would for home fries. Such a shame to use a mix. It's only grated potatoes, grated onions, salt, and an egg. They're just little pancakes. If you really don't want to grate them by hand, use a food processor.
