    NOTE: Chili's steams their ribs similarly. It's what made 'em famous and why peop le come back. But the comment below is correct, that's too much time in the steam. 10-12 mins. is fine. Time in oven depends on how hard a sear you want. Dark, heavy bark, go a little longer. Just as t a nice glaze, go a little less. 12-20 min. Do a second sauce application 1/2 way thru if you go for longer time.
