    Great job, Erina! When I prepare chops in the Instant Pot, I first slice a big onion and sauté the rings until they're starting to go brown, finishing with a tsp. of mustard. I'm a bit obsessed with cranking up the taste of the gravy. Traditionally, we Brits accompany pork with apple sauce in the cold months. I think your mashed potato (called simply 'mash' here) looked wonderfully creamy and if you can get those buttery, pointed 'Hispi' or 'Sweetheart' cabbages over there, well, they go brilliantly with this dish.
