I tried this with Jasmine Rice and used fire roasted crushed tomatoes for the tomatoes. I made the mistake of putting the oil in before the pot heated up and that may have been the reason that the rice slightly stuck to the pan while I did the first part. After I put the water in, I made sure there were no bits stuck to the bottom. After I turned the IP to pressure cook, it displayed burn after a few minutes and I opened it up and it was really burning so I dumped the contents into a nonstick saucepan and finished it on the stove. The flavor was great, I just need to figure out how to avoid the burn next time.
Turned out great! I made my own crushed tomatoes in a pan with olive oil, grated tomatoes, garlic, crushed red pepper and salt
I have cooked this every day for the past week (: First recipe I make in the instant pot and my husband and I love it.
