    WOW, I think this would suit me better than a good chicken broth when I don't feel well. It all sounds so yummy, and nothing like sipping a good broth when sick. And you are right, it is a healthy broth with lots of nutrients. I certainly am going to try this and I think my hubby will like it too. Thank you so much Jeffrey, you are such a great chef….     I made this last night, after seeing your video a few days ago, and my wife and I enjoyed it very much. We did not have onion brother so we substituted vegetable broth as you suggested, and I also added the lower halves of the spring onions to the basket (to enhance the onion flavor a bit), while the green tops got chopped and added after cooking. My wife liked the mushroom but I preferred the cooked carrots, so I ate those in my soup instead. 😉

    We think this would make an outstanding base for more elaborate soups, so we'll be experimenting with it in the future. A note to any Ninja Foodi users – the non-stick pot needs to heat longer than an InstaPot before sauteing the veggies, and it doesn't like to make 'fond' on the bottom if you stir it too much.

    I believe you when you say that "onion broth" is a thing. However I have never seen it in any of the food stores I visit. Progresso onion soup is very thin. Not my idea of onion soup but OK in a pinch. I am thinking that it might work as onion broth?
