After taking a cruise where I stuffed myself silly, the time has come to shed some of this excess weight. And this fantastic, dress-it yourself, shredded chicken is the PERFECT thing to help me out.
Not only does the chicken shred apart with the touch of a fork, but it becomes so juicy, tender and flavorful from JUST this base recipe that you won’t feel guilty eating it. This is some fine protein here, folks.
And if you want to dress it up, have at it! Want some BBQ sauce on it? Go for it! Want to just squeeze some lemon? Your waist will start shrinking. This will serve as a base for an amazing chicken salad, buffalo chicken dip, chicken to toss into a chicken noodle soup and more. The sky’s the limit with this one! The best part? YOU get to make it how (healthy) you want it!

Is dark chicken meat to use ok?

If you’re using less chicken, say just a little over 2 pounds, would you decrease the cooking time?

I have an Instant Pot Ultra 60. There is no poultry button. What instructions would you suggest for this same result?

There doesn't seem to be a poutlry setting on the Ultra. I set it to Pressure Cook on high for 17 instead. It came out delicious, moist, but a bit tough. I may try less time.

I made this recently and I added juice of a lemon and 1 tbsp of Red Boat fish sauce while cooking, and the chicken came out DELICIOUS!!

could you use frozen chicken breast? Would it need more time?
My favorite kitchen tip is the best way to shred chicken or any meat that is falling apart is to put it in a stand mixer on low with the paddle attachment and it just desecrates it. Makes it the most amazing tearing chicken / beef / pork you ever could imagine.
I shred my chicken in my stand mixer. 30 seconds but yes, it’s a few extra items to wash but worth it to me.

i've been watching a lot of your vids as I;m cinsidering buying one. Might have to be a different brand as I;m in the Netherlands, but still I think the principle applies. I have two questions though…probably dumb questions, but I'm a novice, or less as I don;t even have the pot yet…anyway if you can't smell anything do I need to worry about stuff burning on the inside? and if I make half your recipes do I need to adjust cooking times too?

I follow the Whole 30 and do this with 5-6 pounds of chicken. Instead of shredding it with a fork though, I toss it into the bowl of my kitchen-aid mixer and let the paddle shred it up. Super easy, and super good. I then use it for whatever I have planned for dinner and bag up and freeze the rest for later in the week. I'm loving your videos!
I think you are supposed to avoid quick release for meats to not make them tough or to have it turn out as tender as possible.
