Ooh, that looks SO GOOD! I have an Instant Pot but honestly I'm kind of scared of it. It's very different from "regular" cooking, and I haven't experimented much. I do love how this recipe looks, though. Do you know if gluten-free baking mix will work okay? I avoid gluten as much as possible, although I can eat some here and there and not suffer too much.
