    Paella doesn’t use paprika and it doesn’t stir fry the rice. This is a Mexican rice and seafood recipe but not a Paella. My family is from Spain and I cook paellas often….the rice from a paella is moist almost like a risotto and it contains annatto seeds that have been sautéed with the oil.

    My ex lover from Spain — his mother taught me this about Paella (which is cooked best over a wood fire), and they were from Valencia where the "poor man's" version originates. Fifteen minute rule: after all ingredients are in pan, a 15 simmer, cover, 15 minutes in overn, 15 minutes rest with cover. With Valencian paella, add green beans at pre oven step. The seafood version: add all the fish or shellfish late after rice is well-simmered. Clams, shrimp, scallops, even langostino or lobster to steam without over-cooking. Very filling and hardy dish. Saffron is essential. Invest in a few ounces despite cost of it.

    I love the fact she's using really great and fresh ingredients like the veggies and stuff. I didn't like when she putted the chicken and chorizo into the pan at the same time. It would've been better if she putted one for cooking at the time because I think that way, the protein would've cooked and secured its own falvor.
