One of the most requested recipes I’ve received has been Potato Salad. Except there’s one thing: I’ve never been particularly fond of the stuff.

BUT I know I have to give the people what they want and seeing as this is a classic side dish that so many have knocked on my door a-lookin’ for, I figured it was time. Except if I was going to make a Potato Salad, I was going to make it my way. And that means some slightly unconventional (yet totally accessible) ingredients to make it not only the best and prime Potato Salad out there, but one that could even turn those not really into it, on to it.

What I love the most about this recipe is that you pressure cook the potatoes AND eggs at the same time IN ONE POT thanks to the Instant Pot! So call some friends and have a party – because this Potato Salad will be the star of it.

    Update–Jeffrey, I made and served this on my Thanksgiving buffet. All was gobbled down by these Texans and Louisianans. Several women asked for the recipe and I enjoyed telling them it was from a Jewish boy from New Yawk! Again, I hope you and Richard and the rest of your family are safe in the nasty weather (my T'giving was 76F here in the Houston area).

    Jeffrey, I have made this recipe so many times since it came out. I never could exactly get what I wanted in my ps, but this does the trick! I can tell you that I'm planning to making it for our Thanksgiving down here in the warm Houston area. Best Thanksgiving ever to you and Richard!

    You must have got recipe watching African Americans making their potato salad. A little less mustard and relish, but right on. I live in Amish country and they swear by German or Amish potato salad which is swimming in too much sweetened mayonnaise. Much too loose for my taste. Good job !

    Jeff… I made this for a baby shower I hosted yesterday, to go with pulled pork. I substituted the little tiny baby potatoes in different varieties to save cutting time. I live in the Atlanta area, but had guests from all over the U.S. … and they all raved about your salad! Another great 👍👍👍

    I made this for our annual church picnic. The last that I saw of the potato salad was a little girl scraping the bowl, dropping the spoon and getting a bigger serving spoon so she could get the very last of the potato salad. Thank you so much!

    I also loved ❤️ 💕 💗 the fact that you left the skins ON the potatoes. 98% of the vitamins (including vitamin C!), in potatoes are in the skins, plus it gives good dietary fiber/roughage, which is necessary for optimal good digestive health.

    I like that you added a little bit of celery seed & SWEET pickle relish (I use Mt Olive sweet pickle relish or Del Monte sweet pickle relish) and I also put the celery seed & SWEET (not dill!) pickle relish in my pasta salad as well!! 👍❤️😉

    I learned (the hard way) to NOT use red wine vinegar in these summer salads.

    It gives it a pinkish tint (which makes it look spoiled, 😩😖 even though it’s not!!) White vinegar or apple cider vinegar are both equally good, but in these summertime “picnic” type salads, the apple cider vinegar gives a tiny bit of extra fantastic flavor boost.
