Awesome Jill – This chili hit the spot! I made it for supper tonight for my husband and myself. I didn't have kidney beans, so substituted pinto with the mayocoba beans. Poured it over baked potato wedges, yum, thank you for another great recipe!
Hey Jill, I just made this! It is FANTASTICALLY DELICIOUS!🥰. Please help me. What can I do with the two left over Portobello Mushrooms? I had to buy a package containing three and I have never bought these before. Any tips/hints would be appreciated.

Jill, I made this last night. I doubled it and used a 8 oz. pkg. of mushrooms whirred in the food processor like you suggested. PLUS a half pkg. of Soy Curls whirred up like you did for the white chili (because that was SO delicious). It was a total hit! Even my mushroom hating young adult loved it. ;). We all had large portions last night. There was enough left over to take for work lunches. Thanks, Jill. I can really trust your recipes to be fantastic. And this time of year we love these hot comfort foods. Oh, and this is so versatile. My daughter topped hers with soy yogurt (your recipe). And I added spinach to mine. Today I’ll put mine over a potato. Yum!
