    Nate, you are my favorite chef. I don't know how to do those monster pork chops cuz my parents' generation was so scared of undercooked pork, that they cooked it to "leather". I want to learn this. It's a gorgeous dish and those flavors are so perfect for fall.

    An actual recipe would've been nice. No list of ingredients or quantities given. Even if one takes the time to watch and write everything down, it will be trial and error to get the flavors right. I won't bother. I'll use other recipes for the components and do it my own way.

    Looks fantastic! Reminds me of a jazz band I played in during mid 90’s. Our trumpet player’s nickname was Pork Chops and his signature solo was in a song titled Cranberry Sauce. Zippity boop bop skittity bam zingity do dah beet bop yeahhhhh. Ah this really takes me back.
