Don't use the same water for grinding in which dal is soaked.
Water in which dal is soaked should be discarded
Ice water is used because the mixie gets heated while grinding, which will make the batter too sour.
What Is the reason for using cold water. My doubt is little warmness is needed for fermentation. Please clarify thank you
You have not added soda. Where I stay currently the climate is cold from November to February. And we are unable to get fluffy idly's . Second can we add vendyam (methi seed) for idly batter too??

It's very nice but y v must use ice cold water for grinding
