Joshua is right – texture is more important than taste. It's why I love almost every kind of potato – roast, twice-baked, deep fried, air fried, grilled, but I can't stand mashed potato.
Pro Tip: You can also just use Dashi no Moto. Which is Instant Dashi Powder. And it's not even that expensive and can be found in literally every Asian Supermarket. Thank me later. 😉

I once made traditional tonkotsu and my god was it not worth it. Proper tonkotsu is something you should just cut down like josh or just eat in a restaurant
