If you wanna add fresh tomatoes on your tomato rice, just substitute the bouillon with a big tomato then just mash it into the rice when it is done cooking.
I have to say that I don't understand how anyone can make rice like that. But okay, not judging! I only make rice the portuguese way. We use olive oil and onion. And you can add any vegetables you want.
