    The dump cake doesn't work as well with oil. It stays too wet and tastes greasy. And if you leave out fat altogether, depending on the fruit, it's either dry and gritty or gummy. Butter is the right call.

    Our traditional Easter meal in Scotland is lamb – our local Aldi has a whole leg of lamb for the equivalent of $28 – $30. I was tempted but no one else in the family likes it. I ended up with a free range chicken and sides of goose fat roast potatoes and a selection of vegetables. The chicken was expensive but the veg was all under a dollar. Carrots, parsnips and Brussels sprouts. We have gravy or bread sauce and pigs in blankets with the chicken too – pork chipolata sausages wrapped in streaky bacon. Our bacon is very different from the US -maybe a bit like more Canadian bacon. Your dinner looked lovely and way less than I’ll end up spending.

    The effort you put in to make everything nice for your family on such a small budget is admirable and aspirational. I don't have children but if I did this is what I imagine I'd like to give them.

    I can't believe the price of groceries lately, but especially potatoes!! I used to be able to get a 3 lb bag at the 99 Cents Only Store for $2, now Walmart Neighborhood Market is selling a bag of potatoes for $4.79. I get stunned now when I go to the grocery store. I've been living off bananas and PB&J sandwiches for a while now. My union's monthly food bank has become a necessity.

    You are really inspiring. I don't do these kinds of elaborate setups…but honestly yours only looks elaboate and is actually pretty simple. I'm usually a "fix your plate in the kitchen and sit at thebplain table" kinda gal lol…but I might just try something nice soon.

    Another dessert option sprite plus cake mix baked berries and whipped cream
    We use cherry pie filling and pineapple for our dump cake. It's tasty but not the prettiest. Whip cream does make it better.
